Hebe's Indian Mulberry Turkey Meatballs

Ingredients

Indian Mulberry Turkey Meatballs

1/2 tsp Minvita Mulberry Superfood Powder
165g turkey breast mince
1/4 tsp cumin
1/4 tsp ground coriander
1/4 tsp ground mixed spice
2 tsp light soy sauce (or soy-free alternative)
2 tsp organic apple cider vinegar
2 tsp water
pinch Natvia/palm sugar
pinch rock salt (to taste)
coconut oil, to cook

If you’re looking for a way to incorporate our health-boosting powder into not only smoothies and baking, this week’s recipe is for you and comes from health blogger Hebe, who has created a delicious savoury way to get the power of mulberries into your lunchtime or evening meal. Take it away, Hebe!

1. In a medium sized bowl, combine everything apart from the turkey – it should form a paste

2. Add your turkey and mix well. Here you can add any extras you would like – for example, chopped chilli or fresh coriander

3. Allow the mix to sit for a couple of minutes. Pinch off and roll into balls or patties

4. Heat a non-stick frying pan to high heat and add spray oil or coconut oil. Add your turkey, turn the heat down to medium and cook until done. Serve up and enjoy!

Tip: If you are concerned about over-cooking them, you can fry in the pan until well browned, then pop in the microwave for 15-20 seconds or so to completely cook through, before returning to the pan if desired to ‘finish’.
